I have the same request.  I want to track when an email is opened, but I don't want to track the attachment, and this is why: replacing the attachment with a link creates one more step for my potential client to take. I'd rather deliver the attachment and not be able to track it, than to deliver a link and be able to track it.

I guess I want a "Read Receipt", but not "Total" tracking.  Thank you!
